Chop’s BBQ and Catering is a family owned and operated BBQ restaurant in Smithville MO at 109 East Main St 64089.
Chop’s opened in Fall of 2016 and have been serving good queue to locals and visitors. Chop’s is a cozy, oldschool spot on the Smithville square. This location was previously Tender Butt’s and Smoking Thighs barbecue restaurant. Tables are topped with butchers paper that can make fun for family and quick table cleanup. Notable neighbor Justus Drug Store is a block down the street.
The grand opening of Chop’s wasn’t without drama. Soon after the opening the restaurant suffered a fire in the rear of the store and was forced to acquire new gear and do some repairs. Opening a barbecue restaurant is hard and you need to admire Chop’s for the energy to persevere thru their grand opening that include some unfortunate challenges.
Chop’s brisket is thick. Not everyone can serve a thick cut and many of our favorite barbecue restaurants slice their brisket paper thin to create artificial tenderness. But not at Chop’s. This is a thick slice that can not be accomplished without perfect preparation. Even thick cut brisket king Danny Edwards would be proud of the hearty brisket served up at Chop’s.
Chop’s sauce is the classic sweet and thick molasses style sauce that is offered in classic and hot variation. This sauce has a great flavor and you will pleased to overindulge on the squirt bottles of sauce that sit on each table.
Chop’s features all the barbecue favorites including ribs, burnt ends, sausage and turkey. The menu also includes barbecue nachos, cheesy potatoes and several variation of fries. This location is family friendly and features a kids menu. Chop’s is also a great place for catering.
Barbecue is sparse in the Northland and Smithville should be proud to have their own local que joint. A trip to Chop’s Barbecue and Catering will get you great friendly service and some good barbecue.
